As promised – my favorite bread
A few days ago I named my breadmaker as one of my favorite things and promised to share with you my favorite bread recipe. It’s nothing sophisticated, but the bread is moist and flavorful, but also crusty and substantial. Mmm…
Ingredients:
3 cups flour (I use 2 C. whole wheat flour + 1 C. bread flour or unbleached white flour)
1 tsp. salt
1 1/2 TBS milk powder
1 TBS brown sugar
1 1/2 TBS butter
1/2 C. plain yogurt
13/16 C. water
1 TBS yeast (I use 2 TBS and put the setting to rapid bake)
Put the ingredients in according to your breadmaker’s instructions. On my breadmaker I put it on the rapid bake, whole wheat, medium size loaf setting.
That’s it! 5 minutes to throw it all in, and 3 hours later I have toasty warm fresh bread and my house smells amazing!

sounds delicious. maybe i’m a noobie but i haven’t heard of adding yogurt to bread recipes before!
I used to be a sweets baker in a “natural” foods bakery. We used many substitutes for “bad” fats and found that fats could be eliminated all together in a lot of baked goods. Alas, the extent of my work didn’t include the yeast doughs. I do know that the bread bakers used no oils or butter in their products. I haven’t been able to find yeast dough recipes without any fats at all. Have you tried this recipe without the butter to see what happens?
Maybe I am just ‘old school’, but I cannot bring myself to get a bread maker. I just love doing it by hand and baking it in the oven. I like getting the oddly shaped breads and all that. Bread makers are just a little too uniform for me.
That being said, my brother in law has one and I liked the fact that he put it on overnight and the smell was just delightful in the morning.
