I just love doing it by hand and baking it in the oven. I like getting the oddly shaped breads and all that. Bread makers are just a little too uniform for me. That being said, my brother in law has one and I liked the fact that he put it on overnight and the smell was just delightful in the morning. Thanks, Joanne. We used many substitutes for "bad" fats and found that fats could be eliminated all together in a lot of baked goods. Alas, the extent of my work didn't include the yeast doughs. I do know that the bread bakers used no oils or butter in their products. I haven't been able to find yeast dough recipes without any fats at all.
